Description

The 'Southern Seas' is a brand-new addition to the L.A.S. Vino lineup for 2025, born from Nic Peterkin’s hunt for a cooler, more "maritime" expression of Chardonnay. After a string of warm, dry years, Nic headed to the southern tip of the Margaret River cape, where the vines are lashed by both the Indian and Southern Oceans. The result is a wine with a longer growing season and a naturally higher level of "zip" and tension than anything else in the stable.

The winemaking remains as careful as ever: hand-picked fruit, whole-bunch pressed, and fermented in a mix of 90% French barrique (30% new) and 10% amphora. By skipping malolactic fermentation and sticking to the free-run juice, Nic has kept the focus entirely on the site's fresh, salty personality.

This is a leaner, more saline expression of the Margaret River style. Think Granny Smith apple, lemon, lime, and salted cream, all underscored by wet stone and a bit of chalk. It’s elegant and silky smooth - Nic describes it as very much in the vein of a Chablis, but with that extra bit of Australian "oomph" and weight. It’s a compelling, fresh new chapter for L.A.S. Vino that we are incredibly excited about. Might have been our favourite of the 2025 Chardonnays.

Vineyard



Following several warm, dry vintages in Margaret River, we sought out a vineyard at the southern end of the Cape, a place where conditions are naturally cooler and shaped not only by the Indian Ocean, but also by the Southern Ocean. This dual maritime influence extends the growing season, producing fruit with naturally higher acidity, greater tension and layered texture. In 2025, the contrast across the region was striking: fields in the south remained green and vibrant, while those to the north were dry and golden. Increased moisture, greater cloud cover and cooling Southern Ocean breezes, combined with classic rich gravelly loam soils, have delivered a Chardonnay that feels distinctly different. This site brings a fresh and compelling new expression to our portfolio.

Winemaking

The fruit was hand-picked, chilled overnight and gently pressed as whole bunches, with only the free-run juice retained for fermentation. The juice was softly settled and racked off heavy solids before fermenting in a combination of barrique (30% new) and amphora, where it matured for 11 months. The wine was not fined and underwent only a light filtration prior to bottling, allowing the character of the site and season to remain clearly expressed.

Nic Peterkin’s blood runs red with Margaret River wine.

The son of Pierro founder, Dr Mike Peterkin and Shelly Cullen, of you guessed it, Cullen wines fame, the force is strong with this one. His wines are out there, challenging the status quo of one of the country’s most respected wine-producing regions. This is the “New Guard” of Margaret River, and the wines are coming out all guns blazing.

Nic is playing with some varieties off the beaten path of classic Margaret River. The Chardonnays and Chenin Blancs are stellar, as is the Cabernet but the likes of Touriga Nacional and Sousao all find a home amongst his eye-catching range.

There's some serious substance to his project, being named as the 2016 Gourmet Traveller Young Winemaker of the Year for his eclectic and tantalising releases and recently named the Dark Horse of the Year at the 2023 Halliday Wine Companion Awards. Nic is one of the most creative and boundary-pushing winemakers in the country, without question. His Margaret River range is truly unlike anything else you will find in Australia.

Most wine retailers list at a single-bottle price and then discount 10–15% when you buy six or twelve. We've taken the opposite approach. Since the overwhelming majority of our orders are already 6 bottles or more, our list price is set for the case buyer from the start. There's no inflated single-bottle price to discount down from.

What that means for you:

- One price, same for everyone — no minimum to hit to unlock the best rate
- No mixed-six gymnastics to qualify for a discount
- Our single-bottle price is typically at or below a traditional retailer's by-the-dozen rate

Put simply: the box discount is already baked into the price.
