Barossa might not be the first place that springs to mind for Prosecco, but Domenic Torzi proves it absolutely should be. Crafted using the Charmat method, this sparkling wine combines fresh, lively energy with a surprising touch of complexity—perfect for easy-drinking celebrations or casual catch-ups.

Sourced from limestone and quartz soils in Angaston, the fruit is hand-picked and naturally fermented to keep things vibrant and clean. A cool 2023 vintage brought just the right balance of ripeness and acidity, with secondary fermentation in tank adding those fine, persistent bubbles.

On the nose, expect lime, white flowers, and a whisper of stone fruit. The palate is crisp and refreshing, with green apple, melon, and citrus leading to a dry, zesty finish. It’s light, bright, and just plain fun.

Ideal as an aperitif or paired with a plate of antipasti, this Prosecco nails the brief: bubbly, affordable, and delicious.

Saline, gently nutty, lemon and lime, green apple, some floral notes. It’s tight and salt-crusted, like the tasty little cracker it is, the bubbles are quite fine but insistent, lime rind and fine chalky texture, real energy here, and it’s so good to drink. A little soda water bite on a finish of excellent length. These pretzels are making me thirsty!"

Prosecco is the traditional sparkling wine of Veneto in northern Italy. Unlike Champagne, Prosecco is made using the Martinotti/Charmat method, which is tank-fermented as opposed to bottle-fermented. This gives it its aperitif (before food) origin of lively freshness.

Vintage Notes:
The 2023 vintage was mild in the Barossa, allowing flavors to develop slowly while retaining excellent acidity for freshness. This produced a fruit-forward wine with a silver-green hue and outstanding natural acidity.

Tasting Notes:
Beautifully frothy and bright with excellent persistent bead. Aromatically lively, with notes of stone fruits, lime, and white flowers. The palate showcases orchard fruits, melon, apples, and lime. Finishes dry, fresh, and rounded, with excellent acidity, texture, weight, and persistence.
