This Savagnin No. 4 is a unique Aussie take on the Jura’s famous Vin Jaune style, harnessing the complexity of flor yeast with The Other Wine Co.’s signature drinkability.

Adam Wadewitz spent time in the Jura making wine and this little number is a tip of the cap to his favourite wine styles from the region. Grown on the Fleurieu Peninsula, this 375ml hand grenade of deliciousness spends 18 months developing under three different flor yeast strains, building a complex, savoury profile that’s equal parts texture and refreshment.

Expect delicate white florals, citrus zest, and a touch of fresh hay on the nose. The palate follows with nutty savouriness, a pop of lemon pith, and a hint of saline – as mouth-watering as it is intriguing. Fine acidity keeps it bright and taut, while skin contact lends a subtle texture and mid-palate richness.

There's only a hint of the salty/seaspray characters you'd see in the wines from the Jura but it's there.

This project is Shaw and Smith’s equivalent, a chance for the winemaking team to stretch beyond the classicism that defines them.
