Description
Ray Nadeson and Maree Collis are true Champagne devotees, and particularly lovers of the rich wines of the Côte des Bar in Champagne. This predominantly Chardonnay blend (89%) comes from the cool, schist-soiled vineyards in Drumborg, with a touch of Pinot Noir, Pinot Gris, and Meunier for added complexity.
It's made in the traditional method. The Chardonnay from the 2020 vintage forms the backbone, complemented by 11% from a 20-year-old perpetual blend. The grapes are whole-bunch pressed and naturally fermented in barrique and foudre. After maturing in wood until June 2021, the wine rested on lees in bottle until its August 2023 disgorgement, with a minimal dosage of 1.5 g/L making for a dry and expressive Australian sparkling that tips its cap to the great wines of Champagne.
It smells of green fruit, citrus, and oyster shell, followed by crisp white peach and a chalky finish on the palate. This is a limited release, with only 1360 bottles disgorged.

"Really full, textural and rich sparkling with honey, toast, nutty and very strong saline characters rolling around. Vinous in a way, but full-bodied, a touch of sherbetty lift and light white vinegar tang, a funky kind of fizz with lots of personality, vivacious feel and gentle bubbles.
