Description

This is the seventh release of Paralian Shiraz from Springs Hill, and one of Skye and Charlie's best to date. Sourced from two dry-grown blocks planted in 1975 and 1998, it’s classic Blewitt Springs - blue-fruited, finely structured and bright yet savoury.

The winemaking is a nod to the Northern Rhône, inspired by Charlie and Skye’s recent visit to the iconic Chave family in Mauves. They aim for an "unbroken thread" of site character, regardless of the vintage. The fruit was hand-picked and wild-fermented with a 20% whole-bunch component to lift the aromatics, then aged for 10 months in French oak puncheons (only 17% new)

There’s more depth this year, more spice, and a little more grip. It’s not trying to be loud or flashy. The power here is in the detail - dark berries, graphite, pepper, and just a flick of whole-bunch spice. It’s tight, pure and built to age. The Shiraz is consistently one of their best wines in the range, and the 2025 is no different.

97 points - "The first year the Springs Hill vineyard has been under full Paralian viticultural control (and ownership) from winter dormancy through to bottling. Two plantings, one 1998 and the other the original ’75 vines; 2t saw 20% whole bunches, with 5t destemmed; 10 months in French oak, 17% new. There’s such a site signature here, blue fruits and floral notes, iron and iodine, soft licorice, a smoky/earthy quality, something like humus-rich earth and moist tobacco. There’s also black olive, sun-warmed hardy herbs and lavender. It’s a complex wine, high in detail, the tannin quality of the highest order, the drive and length compelling. Single Vineyard Shiraz, fruit sourced from ‘Springs Hill Vineyard’, Blewitt Springs, McLaren Vale grown by Paralian Wines.

Two dry grown plantings, 1998 on Holocene sand, North/South aspect 205-210m altitude, 1975 on sand and ironstone, North-East/South-West aspect 195-205m. Sustainable Winegrowing Australia Certified Vineyard.

Hand-picked in two batches on the 4th of March. 20% whole bunch foot trod in one fermenter, remainder destemmed whole berry and chilled to 5’C on top, the other fermenter wholly destemmed. Just plunged/mixed for 5 days of cold soak until wild ferment took off. During peak ferment we pumped over two-three times a day until zero Baume. Shiraz needs a good amount of air during ferment, especially wild ferments, and unlike Grenache, it can handle the oxidation to help bring the breadth of colour, flavour and tannin we desire. 14 days on skins, pressed to tank for sugar dryness, settled and racked with fluffy lees to French oak puncheons (approximately 17% new) for wild malo and 10 months maturation.

We make no secret of admiring the Shiraz from the Northern Rhone and certain producers whose wines speak consistently of place - where the season shapes only the intensity of flavour and tannin, not the character itself.

This year we were lucky enough to visit dear friends, the Chave Family in Mauves (Northern Rhone). In conversation we found ourselves circling a similar ideal for what we want from our Shiraz - that each vintage carries an unbroken thread of aroma and flavour, no matter the growing season, it must always taste like Springs Hill. It has been very rewarding to see each vintage unfold inline with our intentions.

This is a wonderfully poised Blewitt Springs Shiraz expressing the assets of the 2025 growing season. There are ripe blue fruits at its core, laced with coal and peat, tar and lilac, ironstone, Dutch liquorice and black pepper spice. It maintains a pure line of primary blue fruits with lovely savouriness throughout and a more open tannin profile due to the drier season.

Since the overwhelming majority of our orders are already 6 bottles or more, our list price is set for the case buyer from the start. There's no inflated single-bottle price to discount down from.

What that means for you:

- One price, same for everyone — no minimum to hit to unlock the best rate
- No mixed-six gymnastics to qualify for a discount
- Our single-bottle price is typically at or below a traditional retailer's by-the-dozen rate
