The 2025 release of Paralian’s single-vineyard Fiano comes off the Lacey family’s vineyard in McLaren Vale – grown sustainably on sandy loam over limestone and ironstone, just a few k’s from the coast. It’s a variety that’s really settled into this part of the world, and Charlie Seppelt and Skye Salter are handling it with the kind of light, thoughtful touch it deserves.

Picked in the cool of night, the fruit was mostly fermented in stainless to keep things bright, with just a splash going into old French oak for a bit more shape. Some extended lees time rounds it out and brings a gentle savoury thread to all that freshness. It’s aromatic and crunchy but not too lean – there’s texture, a bit of grip, and just enough complexity to keep it interesting without losing the drinkability.

It’s the kind of white you’d happily pour with seafood or drink cold out of a tumbler on a warm evening – uncomplicated, well made, and just really nicely judged.

It’s juicy in green apple flavour, lime and lime leaf perfume, a stony and light chalky grainy grip to texture, again the fresh green apple bite to acidity, with a lively crunch on a finish of good length and raw almond bitterness. Here’s a good drink. It has a sort of rustic let’s-drink-it-fast-and-cold-from-tumblers charm about it, which I think neatly encapsulates the appeal of so many Italian white wines, even though this one is from McLaren Vale. Fiano is a grape variety that hails from the Campania region in Italy and is currently making waves in McLaren Vale. A variety well suited to our Mediterranean climate and a perfect accompaniment to our coastal lifestyle.

All of the decisions made in making this wine were to maintain the freshness and purity of both variety and place. Harvested in the cool of the night and gently pressed in the early hours of the morning. The wine underwent a slow and cool fermentation, the majority in stainless steel to preserve the aromatics, then a small amount fermented in a three year old French oak puncheon to add a layer of complexity. One month of extended lees contact followed fermentation to enhance texture and mouthfeel before bottling.

Highly aromatic, this wine opens with vibrant notes of Meyer lemon and lime juice, followed by fresh, crisp pear and a hint of Granny Smith apple. Subtle undertones of fennel and white pepper add complexity to the nose. This years Fiano has a lovely textural line with a little lees work and the inclusion of a single oak barrel upping the complexity this year. Flavours of ripe pear and chamomile unfold gracefully, supported by refreshing acidity and a saline, finely structured finish. A brilliant pairing with salt and pepper squid.
