Description

If there’s one thing to know about the Farrs, it’s that they don’t do things by halves - this isn’t just a summer sipper; it’s a proper wine with depth, texture, and ageing potential.

Made using the saignée method (which means “to bleed” in French), free-run juice is drawn off from Pinot Noir after just a few hours on skins, giving the wine its delicate colour while concentrating the remaining red ferment. But unlike most rosés, this one is then barrel-fermented with wild yeasts, put through full malolactic fermentation, and aged for 10 months in four- and five-year-old barrels before bottling.

It shows as a pale, onion-skin pink, with a nose that’s equal parts ripe fruit, savoury almond, and a subtle marzipan-like richness. The palate follows through - silky, textural, and effortlessly long, with the kind of softness that draws you in like a deep, luxurious sofa you don’t want to leave.

It’s one of Australia’s most impressive pink wines - structured enough to age, complex enough to stand out, and absolutely delicious on release. If you’re lucky enough to still have some in a few years, it’ll be even better.

Saignee, technically meaning “to bleed game meat or poultry”, refers to the way we ‘bleed’ juice for this wine. We allow the Farr Rising pinot noir fruit to sit in tank for two to three hours before bleeding free-run juice at a suitable colour for rosé production. This process concentrates the pinot ferment, but we also produce a barrel-fermented rosé. Natural barrel fermentation at cool temperatures is followed by full malolacitc fermentation. The wine is then placed in four- and five-year-old barrels for 10 months before being filtered and bottled.

TASTING NOTE – ‘This wine has been gone for too long. I’ve missed it. It has a pinkie onion skin vibe in the glass, and the nose is of ripe fruits, and a complex oak derived aroma, but not simply woody, maybe more like almonds or more specifically a marzipan character. On second smell, the nose is of a tropical fruit note, nothing too precise, but generous and ripe. It’s fun to keep going back to it. Few pink wines have this intrigue or complexity. I like that about it, especially in a world of triviality and instant gratification expected from rosé wine.

This wine will only be more interesting as it develops and evolves, and that type of thing is becoming scarce. The palate of this wine is soft and generous, like a luxurious sofa. Something you don’t want to get out of. One of, if not Australia’s most impressive pink wines and for good reason. That reason being that it’s complex and delicious on release and if you find that you have some in a few years, it will still over deliver, as a terrific bottle of wine, regardless of colour.’ Nick Farr"

Gary Farr is one of the most iconic winemakers in Victoria, or indeed, the country. He was responsible for taking Bannockburn in Geelong to the startling heights it reached as one of the benchmark producers of Burgundian varieties in the country. His own label, By Farr, is quite simply one of Australia's finest producers.

The Farr vineyards are based in the Moorabool Valley in Geelong, with a wide array of ancient soils resulting in small yields of incredibly intensely flavoured Pinot Noir, Chardonnay and Shiraz and Viognier. With Gary's son Nick now making the wines, as well as taking his own Farr Rising label to monumental heights, this is a project set to dominate Geelong wine for years to come.

If you want to see one of the country's great winemaking families at work, anything by the Farrs will be one of the best examples of its kind in the country. Sheer class, guaranteed.
