Description

Sam Coverdale has been quietly flying the flag for serious Mornington Pinot Gris for years, and this release shows exactly why. It comes off Mill Hill Vineyard, one of the highest and windiest spots on the Peninsula, where the fruit ripens slowly and keeps its bright line of acidity.

The grapes were hand-picked, whole-bunch pressed and fermented wild in barrel with all the solids left in – no fining, no fuss, just time and patience. It sat in oak for about six months, building texture and savoury depth while keeping that lovely mineral freshness at its core.

It smells of pear, sea spray and fresh herbs, with a little nuttiness underneath. The palate’s layered and gently creamy, with orchard fruits and a chalky, pithy edge that gives it grip and focus. It’s Pinot Gris with real shape and substance – more about texture and feel than perfume.

TASTING
A nose of pear, seapray, Asian broth, fresh summer herbs, grassy aromatics. A focused palate of minerals, textural pithy pear and orchard fruits, light praline and almond meal. As it opens up in the glass it becomes more generous but still has drive and persistence


WINEMAKING
The fruit is handpicked and whole bunched pressed using a gentle champagne press cycle. No enzymes or sulfur are used at the press tray and the juice is oxidatively handled to get rid of oxidative enzymes early on in the winemaking process. The wine is left at ambient and transferred to barrel with full solids, with minimal sulfur added. Fermentation occurs using wild yeast and it is then left unsulfured to the following summer at which time most of the wine has completed full malo-lactic fermentation. A minimal amount of sulfur is added and left in barrel for a total of 6 months where it is racked off gross lees and transferred to tank. The resulting wine is bottled using no finings and minimal filtration.

The Mill Hill vineyard lies 270m above sea level, and is the highest and one of the more exposed sites in the region. This ensures a long ripening period which creates high levels of natural acidity which persist through to the wine.

We grow, make and farm our vineyards using a philosophy of  sustainability and regenerative agriculture, applying a mix of  biological, biodynamic and organic practices.
