Nick Spencer has a knack for making wines that feel both sophisticated and incredibly easy to like. This 2024 'Unum' is a clever play on the GSM blend, but with a twist. By swapping the usual Shiraz for Sangiovese and Malbec, Nick has moved the wine away from jammy territory and into something much more vibrant and structural.

The work in the cellar is all about preserving that energy. Each variety was fermented separately and 100% de-stemmed before being pressed off to old puncheons and clay amphoras. The use of amphora is the secret here; it allows the wine to breathe and build texture without any oak flavor getting in the way, keeping the fruit pure and the tannins fine.

In the glass, it’s expressive and layered. You get red fruits and spice, but there’s a savory, gamey character that gives it some real soul. The palate is long and bright, backed by the kind of chalky tannins that belong on a dinner table. It’s a polished, modern red that shows exactly why Nick is one of the most respected guys in the NSW scene.

Dark berry flavours come flitted with mineral, mint, earth, twiggy herbs, sweet spices and suede leather. It’s medium weight and unforced but the curl of integrated tannin is elite – it almost adds a dry spark to the wine – and the finish itself introduced florals, brighter red berry notes, and more of that mineral-infused spice character. Each variety was picked and fer- mented seperately. 100% de-stemmed with and fermented on skins for 14 days. Pressed to old Puncheons and Amphoras.

Nick Spencer Wines

Nick Spencer is one of NSW's most decorated winemakers. Over the span of more than two decades, he has become perhaps the state's most outspoken advocate for the potential of the regions of the NSW High Country, in particular, Tumbarumba and Gundagai.

Nick's wines exemplify balance, style, immense drinkability and exceptional value for money. As his label has expanded, his winemaking has become more adventurous, now incorporating the use of amphora, sulphur-free bottlings and a more stripped-back winemaking style to highlight the quality of the fruit that these lesser-known NSW regions can produce.

He is one of the most important producers in NSW today and is the touchstone of quality for the state.

No, all prices are set at the full discounted dozen rate already.

Most wine retailers list at a single-bottle price and then discount 10–15% when you buy six or twelve. We've taken the opposite approach. Since the overwhelming majority of our orders are already 6 bottles or more, our list price is set for the case buyer from the start. There's no inflated single-bottle price to discount down from.

What that means for you:

- One price, same for everyone — no minimum to hit to unlock the best rate
- No mixed-six gymnastics to qualify for a discount
- Our single-bottle price is typically at or below a traditional retailer's by-the-dozen rate

Put simply: the box discount is already baked into the price.
