Dash Farms has quickly become one of the most intriguing vineyards Josh Cooper works with, and the crackling, textural Chardonnay he produces from this high, granitic site shows exactly why.

Planted in 1999 on the southern slopes of Mt Alexander, the vineyard sits at around 450m and ripens just a little earlier than Cobaw Ridge, bringing a slightly different expression of cool-climate Chardonnay into Josh’s line-up. The lean granite soils keep the fruit concentrated yet fresh, and the altitude ensures plenty of lift and energy in the glass.

The 2024 release was hand harvested, foot-trodden, and gently pressed before fermenting in a mix of new and seasoned oak. After a year in barrel on lees and a further stint in stainless steel, it was bottled unfined and unfiltered, with nothing added except a small dose of sulphur. The result is a Chardonnay that balances ripeness with tension, weaving citrus, stone fruit and savoury complexity into a seamless whole.

It’s made in tiny quantities and, like all of Josh’s wines, snapped up quickly. For those chasing a Victorian Chardonnay with both character and pedigree, this is a brilliant place to land.

A lovely balance of freshness and minerality, with aromas of preserved lemons, salted nuts, white flowers, sea spray, olive brine, lanolin, beeswax, grapefruit and flint. The palate is medium-bodied, with a bright line of acidity and a textural mouthfeel that brings everything into harmony. Great structure, fruit drive and mineral edge. An excellent Australian chardonnay with plenty of character. Drink or hold.

Planted 1999 Dash Farms sits perched at over 450m asl on the Southern granitic slopes of Mt Alexander (Leanganook) looking back towards Mt Macedon and the Macedon Ranges. Like Ray-Monde, it sits just outside the Macedon Ranges GI. Ripening for Chardonnay occurs around a week earlier than my family’s vineyard Cobaw Ridge. These lean granite soils and high altitude confer both concentration and freshness at low sugar levels. Once hand harvested with careful sorting in the vineyard, the bunches were partially crushed by foot and very gently pressed. Overnight settling then occurs before transfer to a combination of new Stockinger 300l oak and Burgundian piece for fermentation and lees ageing for 12 months. Followed by four months in stainless steel on fine lees, before racking and bottling, unfined and unfiltered. The only addition to the wine is a small dose of sulphur.

Pale, with a green edge Dash Farm offers glass filling aromas of lemon and grapefruit rind, nectarine, jasmine and spice. Flavours with carry through to the medium bodied palate combined with creamy, savoury complexity and a fine acid line.

Joshua Cooper

Joshua Cooper is the son of Nelly and Allan Cooper, the founders of the acclaimed Cobaw Ridge winery in the Macedon Ranges.

Born and raised on the top-tier cool climate wines of his family, Josh's wines have a delicacy and unforced feel to them. As you might imagine, growing up in the Macedon Ranges, Chardonnay and Pinot Noir are two varieties he particularly excels with, as too is his great love, which is Cabernet. He sources his fruit from a series of growers across central Victoria who farm with a like-minded philosophy of organic farming and sustainability, with plans to plant his own vineyard in Macedon in the future.

Josh makes only a small amount of each wine and they are in high demand from those who want to get in early on the next generation of Cooper. He is undoubtedly one of the country's most exciting and acclaimed young winemakers, being named James Halliday's Best New Winery for 2024 as well as the winner of Gourmet Traveller Wine magazine’s Young Winemaker of the Year 2020.
