Description

If you're a fan of the wines of Jura, then you're in for a treat with the Entropy Savagnin.

The Savagnin comes from the Willow Grove Vineyard in Gippsland, a dry-grown, own-rooted site planted in 2001 on a north-facing slope of red volcanic and grey dermasol soils. When Ryan Ponsford first took on the fruit, the vineyard was in rough shape - neglected, diseased and overgrown. Years of patient work and regenerative farming have brought it back to life, and the results are now speaking loud and clear in the glass.

Fermented wild in old puncheons, with a slow, natural malo and plenty of solids in the mix, this wine is all about shape and savour. Aromatically it nods to the Jura, with notes of lemon, pistachio, oyster shell and custard apple. The palate is powerful yet poised, built on chalky texture and citrus pith, with a subtle yeasty edge and that signature saline drive.

A characterful, full-flavoured white with serious food compatibility and plenty of personality. Let it breathe and you’ll see it open beautifully. Only a few barrels made.

From the Willow Grove vineyard. A north facing hill of red volcanic and grey dermasol soil.

Planted in 2001, own rooted, unirrigated vines.

Wild fermented in 400L puncheons.

Went through a slow but full malolactic fermentation.

This fruit has partially pulpy berries which leads which leads to heaps of solids in the ferments that in turn builds heaps of texture into the finished wine.

On the nose the wine has lemon, pistachio, custard apple, pineapple and some oyster shell salinity.

On the pallete the wine is structured, powerful but restrained. Heaps of texture, with lemon pith, more salinity and some sourdough yeasty character.

Entropy

Ryan Ponsford started his wine adventure with a pivotal bottle of additive-free Pinot Noir made by cult wine figure Bill Downie.

Not long after, Ryan found himself in Bill's vineyard, pruning, plucking, tending the vines and taking notes from Bill and his farming partner Pat Sullivan.

It wasn't long before Ryan jumped in boots and all and started his own label made with the same philosophy as the wines of Pat and Bill. Now he's bought a patch of dirt in Gippsland and is putting vines in the ground.

His journey is just at the beginning, but the DNA of what Ryan is planning is well and truly on the right track. Watch this space, there is plenty more in store for the 2022 Young Gun of Wine!
