Crafted by one of NSW’s brightest stars, Will Gilbert, the 2017 Gilbert Méthode Traditionelle is a sparkling wine that truly stands out. Will is a sixth-generation winemaker, based in Mudgee, and part of a winemaking dynasty that’s been around for over a century. Since taking the reins of the family business, Will has made waves with his meticulous approach and innovative touch. Named the 2021 GT WINE Young Winemaker of the Year, he’s certainly one to watch—and his wines speak volumes.

This zero-dosage sparkler is a showcase of Will’s precision and creativity. Made from the classic Champagne blend of Chardonnay, Pinot Meunier, and Pinot Noir, it’s sourced from high-altitude vineyards in Orange. These vineyards, perched between 880 and 1080 metres, enjoy the perfect mix of cool-climate conditions and abundant sunshine, creating fruit with striking acidity and complexity.

The winemaking is all about purity and balance. Handpicked grapes are whole-bunch pressed, then undergo primary fermentation and maturation in stainless steel and neutral oak before being aged for 63 months on lees. It's a sparkling wine with a fine mousse, razor-sharp acidity, and flavours of red fruit, crisp apple, and a touch of salinity that leaves you refreshed and reaching for another glass.

VINEYARD CONDITIONS
Sourced from the foothills of Mt Canobolas, at an altitude of 880 – 900 metres, these vineyards have extremely fertile soil, rich in volcanic ash. It is deep well drained clay loam, and red and brown ferrosol soils derived from basalt, with silty textures being found at hill top sites. One of Australia’s cooler climate regions, Orange has a mean January temperature of 19.5°C with a 15°C variance between summer and winter months and an average rainfall of approximately 875mm per annum. With Orange being the highest wine growing region in Australia, grapes grown here not only enjoy all the benefits of its cooler temperatures and unique topography, but also benefit from over 9 hours per day of direct sunshine during the growing season. The combination of both the cooler climate and plentiful sunshine is vital to the fruit's ability to develop intense aromas and maintain flavour.

WINEMAKERS NOTES
HARVEST: Handpicked on 28th February 2017. Selected and hand sorted at harvest, these grapes were harvested in small lots in the early morning taking advantage of the cool morning temperatures.

WINEMAKING: Whole bunch pressed and clarified overnight before racking to oak and tank. Primary fermentation and maturation in stainless and neutral oak with regular stirring. Secondary fermentation by traditional method with 63 months on yeast lees.

Will Gilbert is a sixth-generation winemaker based in Mudgee in country NSW who's taken up the family mantle.

The Gilbert family sources fruit from local vineyards in and around the Mudgee area as well as from premium vineyards in the cooler region of Orange. Pinot Noir, Chardonnay, and Sauvignon Blanc feature heavily in their excellent lineup as well as a suite of experimental wines, including Pet Nats and Piquettes.

Will is one of the most exciting young winemaking talents in NSW at the moment. If you like to keep your ear close to the ground on what's hot, Will's wines are to have a close eye kept on them.
