About The Wine
The Domaine Berthet-Bondet Chateau Chalon is the pinnacle of the estate's wines – and it's easy to see why.
This wine comes from vines with an average age of 30 years, farmed organically in the appellation of Chateau Chalon. After fermentation in stainless, it is aged in oak barrels for 6 years. A layer of flor yeast develops on top of the wine, creating the luscious smells and tastes you find in premium vin jaune: nuttiness, cheese, marzipan, spice, mushroom. Delicious.
Naturally, this wine pairs marvellously with a range of dishes, such as chicken roasts, rich cheeses, curries, and a whole array of French foods, and it will cellar for many decades.
About Domaine Berthet-Bondet
Domaine Berthet-Bondet was established in the Jura region in 1984 by Jean and Chantal Berthet-Bondet, neither of whom came from winegrowing or winemaking backgrounds. Vines were planted in the 1980s in the appellations of Chateau Chalon and Cotes du Jura, and they saw their first vintage in 1985.
In 2010 the estate was converted to organic farming, and much of the work in the vineyards is done by hand due to the sloping hills.
Since 2013, Jean and Chantal have been joined by their eldest daughter Helene, who has now been in charge of all winemaking duties since 2018.
