Description

This Cabernet Sauvignon from Joshua Cooper comes from Dash Farm, just outside of the Macedon Ranges, and is the last of his Cabernet Sauvignon sites to be harvested.

This late-ripening site means beautifully concentrated fruit, and it absolutely shines in this cuvee. Dark berries, fine and silty tannin, wrapped in a silk robe of spices, chocolate and a light herbaceousness.

It's powerful yet refined, and could stand for a while in the cellar but it's an absolutely stunning wine right now - so we challenge you try to hold off.

Fruit for this cuvée comes Dash Farm, located just outside of the Macedon Ranges, perched upon the southern slopes of Mt Alexander.

94 Points - "Regal cabernet of flesh and tension, taut ripples of silty tannin holding in a deep bruise of mixed black and blueberry fruit character, faint vanilla and cinnamon spice, a mellow choc-liqourice character and lavender water and finishes cool with amaro-like licks. It's fragrant too, dark fruited, spicy, alpine herb lifted and generally very, very appealing to sniff on. Lots of detail. This one has guts but control, a serious, modern-feeling, sweeter-hearted cab sav. Lovely stuff." - Mike Bennie (The Wine Front)

94 Points - "This 2021 Dash Farms Cabernet Sauvignon is the highest in alcohol of the three wines in this release, and it clocks in at a reasonable 14%. It's the darkest in colour and the most "typical" of the three. Aromas of cassis, licorice, blackberry and black tea appear on the nose, while the palate follows with a stream of black fruit. The tannins ride high here (as opposed to the Shay's Flat, where they lurk on the back of the palate), and the structure reveals a silken lava flow of fruit. It's polished in its way and certainly intense. The granitic soils of the site expose a minerality in the mouth and show dried herbs, tea leaves and brine. Joshua Cooper

Joshua Cooper is the son of Nelly and Allan Cooper, the founders of the acclaimed Cobaw Ridge winery in the Macedon Ranges.

Born and raised on the top-tier cool climate wines of his family, Josh's wines have a delicacy and unforced feel to them. As you might imagine, growing up in the Macedon Ranges, Chardonnay and Pinot Noir are two varieties he particularly excels with, as too is his great love, which is Cabernet. He sources his fruit from a series of growers across central Victoria who farm with a like-minded philosophy of organic farming and sustainability, with plans to plant his own vineyard in Macedon in the future.

Josh makes only a small amount of each wine and they are in high demand from those who want to get in early on the next generation of Cooper. He is undoubtedly one of the country's most exciting and acclaimed young winemakers, being named James Halliday's Best New Winery for 2024 as well as the winner of Gourmet Traveller Wine magazine’s Young Winemaker of the Year 2020.

We want Different Drop customers to always be getting the best price. If you see a lower price elsewhere, just get in touch and we will sort it out for you. We handle all our price-matching on a case by case basis.

No, feel free to mix it up! There is no minimum requirement. You can order wines in any quantity or combination, 1 or 50+ bottles.

We stock three different sized gift boxes (single, three bottle and six), all are available for purchase for a flat rate of $8. They look great and make an awesome impression.
