About The Whisky

Morven takes its name from the highest peak in Caithness, a mountain surrounded by open moors and wetlands from where peat had been cut for hundreds of years.

The flavour imparted by the smoke is a reflection of Wolfburn's history--the original 19th century distillery was largely fired by peat. Wolfburn's newest release is a lightly-peated malt made from malted barley infused with peat smoke during the drying process. Wolfburn has used a peating level of 10ppm, just enough to complex Woflburn's plump, round spirit with a delicate wreath of smoke, but not enough to overshadow its dominant house character.

For reference, Ardmore & Talisker both come in at around 10-14ppm, Bowmore and Kilchoman at 20-25ppm, and the Islay heavyweights clock in between 35-55ppm.

Maturation in a combination of Islay quarter casks and ex-bourbon casks, the current bottling sits around the four- year-old mark.

About Wolfburn Distillery

In 1821 William Smith founded a distillery on the outskirts of Thurso and named it Wolfburn after the watercourse it drew from, “burn” being the Scots word for stream or small river.

The distillery was constructed from hardy local Caithness flagstone and the remains of its foundations can still be seen today. Smith invested heavily in Wolfburn and it quickly became a significant producer of malt whisky – tax records from the early 19th Century show it being the largest distillery in Caithness. In 1826 its annual production was 28,056 “Total Gallons of Proof Spirt” – roughly 125,000 litres.

The new Wolfburn distillery building is just a short walk along the burn from the old site towards the sea.

Wolfburn distillery was kept in the Smith family until at least the 1850s, when production seems to have ceased. The exact date of its closing is lost in time, with some records indicating that it may still have been producing whisky in the 1860s. In 1872 the first Ordnance Survey map of the region was published and this showed the distillery to be in ruin, yet in 1877 when the next edition of the map was released the words ‘in ruins’ had been removed. It may be that the distillery worked intermittently towards the end of its past life.

"Nose: Young and fresh. There's a distant mineral, ozonic, salty, clam broth, dashi thing going on, but in the background. The main aromas come from fresh barley and a green element, like cobnut, birch sap wine, rain-dampened moss. Slowly some smoke comes through, making things all rather refreshing and cool. As you inhale, there's some heather. Water does show up a slightly edginess, as if the peat needs to jostle its way in a little more. Palate: It has that Wolfburn (and how great it is to write that line?) fatness of spirit adding roundness and body--especially to the mid-palate. That saltiness is here as well. Water softens it down and also links the different elements well, but never losing character. There's a light chilli flake heat, but the soft fruits on the mid-palate are key. Finish: Spice, cereal and light smoke. Conclusion: Just at the start of its maturity. Think of it as a northern Kilchoman." - Dave Broom (The World Atlas of Whisky)

Warehouse Pickupis available from our Sydney warehouse in Ultimo, 2007. Just select Local Pickup at checkout. We are open 8am to 4pm, Monday to Friday.

Do I have to order in dozens? No, please mix it up! You can order wines in any quantity and variation you like. You can order 1 bottle or 50. We challenge you to make the ultimate mixed pack of wine!

Are there volume discounts? No, our pricing is designed to be the best in market already - no marking up and then discounting down! For very large orders (weddings, etc) we are open to negotiating though. Just give us a call.

Do we price match? Yes, within reason. Everyday low & consistent pricing is something we strongly believe in. We want our customers to feel confident they are always getting the best price. If you see a price lower somewhere else let us know and we'll consider matching it. We'll even retrospectively issue you store credit if you have already purchased from us but you see a lower price somewhere later on. Our price match policy can be seen here.

Can coupons and discounts be stacked? No, only one discount or coupon can be applied to an order at once.

I am trying to add more of a wine to my cart but it won’t let me? This means we are running low on stock of that wine. So for example, if the website will only allow you to add 3 bottles and no more, then that is all we have of that particular wine. The good news is we may be able to order more for you. Does Different Drop have a physical store? No. Just an a warehouse/office. We occasionally do events however, so sign up to our newsletter or follow us on instagram to stay in the loop.

Can I special order a wine you do not sell? If it’s doable, then we’ll make it happen. Just contact us directly via phone, chat or email and we’ll find out for you right away. Please note that in most cases special orders such as these will need to be in full case lots (6 or 12 bottles).
