These free-draining, rocky soils limit vine growth and produce tiny berries with concentrated flavour, which Christian and Matthias select through several late picking passes.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan\u003eA few hours on skins precede gentle pressing, followed by wild fermentation in stainless steel and wooden barrels.
