From his close-planted Yarra Valley vineyard, evocatively named 'Bloody Hill', and select other vineyards across the Yarra Valley, Timo carves out some astounding wines made with low levels of new oak and minimal additions.
The signature of Timo's winemaking style is his penchant for whole-bunch ferment. His wines have an ethereal quality, firm tannins and impeccable structure. These are compelling and extremely limited wines that tell a unique story of the Yarra Valley.

2018 Timo Mayer Close Planted Pinot Noir
His Close Planted Pinot Noir is one of the Yarra Valley's most sought after wines.
Grown on his small estate 8km South of Healesville, this wine can come and go with barely a whisper of it being released, so intense is the want of his adoring and loyal fan base. It is a slightly wild and fascinating style of Pinot.
The close plantings force the vines to do battle for the lion's share of the natural resources; water, minerals and nutrients. The belief being that great wines are made in the vineyard and a vineyard that struggles bears fruit with the most character and intensity.

2018 Timo Mayer The Doctor Pinot Noir
This is the wilder version of Pinot Noir from Yarra Valley cult favourite Timo Mayer.
The Dr. Mayer Pinot Noir is 100% whole bunch fermented, Timo using the extra stalk component to drag out addition tannin and texture. He has a particular affinity with stalkier Pinot Noir, you can hear his passion in the way he talks about it.
The 2018 is wildly aromatic, powerful and densely concentrated.

2018 Timo Mayer Gamay
It's fair to say Timo Mayer loves him some whole-bunch/carbonic maceration action.
It works brilliantly when applied to lighter red varieties. Case in point - this Gamay has come up trumps...
The fruit was grown on relatively old Gamay vines in the Yarra Valley. The 2018 season giving Timo beautifully balanced and concentrated fruit to play with.

2018 Timo Mayer Nebbiolo
Nebbiolo from the Yarra Valley. Fermented as 100% whole bunches, as is the way of Timo Mayer.
It's Timo's third release and the clawing for allocations has already begun. It's a wine with chiselled teeth of tannin yet a silken feel from beginning to end.

2018 Timo Mayer Syrah
Timo Mayer only makes a tiny amount of Syrah each year.
The majority of the Mayer vineyard is planted to Pinot Noir but a small amount of Syrah makes an appearance on the upper reaches of the Hill. He makes the Syrah in the same way as his charismatic Dr. Mayer Pinot Noir with 100% whole bunches during ferment.
In this part of the Yarra it is possible to make sublime Syrah. Timo's is ethereal, ferrous and a little mysterious, an excellent example of the variety's potential in the region.
Lovers of spicy, detailed Syrah with power and structure - you'll want to try this... But you'll need to be quick.
2018 Timo Mayer Cabernet
Whole-bunch ferments with Syrah and Pinot Noir, in particular, are very in vogue at the moment, but whole-bunch with Cabernet? Are you crazy?! Well, don't knock it 'til you've tried it...
Timo Mayer's Cabernet is 100% whole-bunch, the man does not do things by halves. The benefit here is that the tannins and textural elements of the wine can be derived from the stalks and seeds as well as the skins and it drastically reduces your need for heavy oak influence to impart structure. Of course, this also means that the wine is fresher, more 'alive' in its youth, and doesn't require decades in the cellar to look the goods.
