About The Whisky

Peter Bignell, the man behind Australia's first and only Rye Whisky, could only be described as a trailblazer.

Belgrove is almost entirely self-sustaining. Peter grows his own corn-rye for the base and his home-made still, as well as his farm equipment, is powered exclusively by biofuel.

He chars the barrels, he bottles everything himself by hand. It's a unique operation which is yielding impressive results.

In his assessment of a previous release of this now cult favourite Rye, Jim Murray once labelled it "memorable".

It's a beauty, and a one of a kind thus far in this part of the world.

Critic Reviews

Jim Murray's Whisky Bible

LIQUID GOLD. "No doubting the grain of choice: bristles with a rigid determination. Perhaps a little nougat in the mix from the cut, but my word…that rye…!!! Taste 24.5/25 That is just one fantastic delivery. Perhaps the most concentrated rye arrival I have tasted for a couple of years from any part of the world. Just so sharp, almost three dimensional. On one hand crisp and jagged, as the best rye whiskeys should be, but also a more oily, softer, less fruity version underneath; brittle dark sugars at every turn. Finish 23/25 Takes some time for those light nougaty feints to eat through. Until then, the rye and accompanying sugars – now joined by some biting spices – continue their remarkable show… Balance 23.5 What a memorable rye. The grain leads on both nose and delivery in the same way Watson leads with his pads. 61% ABV no chill filtration." - Jim Murray's Whisky Bible (2016 Edition)

Additional Info

From The Producer

I grow my own ryecorn to produce a 100% rye whisky.

I built my copper pot still from scratch. It is direct fired with biofuel which is used cooking oil, from a roadhouse next to my farm.

Hot water is also biofuel heated. My tractors, forklift and truck also run on Biodiesel made from the used cooking oil.

The only significant material I bring to the farm is waste cooking oil and the main product to leave is whisky.

The spent mash is fed to the Belgrove sheep. Cooling water comes from my dam and the waste water is either recycled or used for irrigation, including the next rye crop.

Brewing and diluting water is harvested from my roofs – I have a lot of farm sheds.  Yeast is often reused.

Here are some catch words that could describe my operation, such as “sustainable” “closed loop” “small carbon footprint” “green” “farm based” “value adding” “craft” “low food miles”.
