Brendan and Laura Carter's obsession with distilling, in a very literal sense, their love for this great sun-drenched land into beverage form seems to know no bounds.
Here is their take on a bitter aperitif (ala Campari or Aperol) forged from Riberries, the fruits of the Lilly Pilly plant and infused with native bush herbs. The Økar is a brighter and fresher version of an amaro. Bitterness and herbal characters with a dash of sweetness balanced on a pin head.
It's an essential ingredient in their plan to create an all Australian Negroni. This, a splash of Aussie made Prosecco, a dash of soda and a slice of orange, and you've got the Australian Summer in a glass.
