Warmer weather in March helped develop flavour ahead of the late-April harvest, while preserving what the estate reports is its highest acidity yet for this wine.\u003c\/p\u003e\u003cp\u003e\n\nThe hand-picked fruit was whole-bunch pressed and fermented with wild yeasts over seven weeks, finishing with 7 g\/L residual sugar to balance that acidity. Time on fine lees added texture before bottling without fining.\u003c\/p\u003e\u003cp\u003e\n\nMandarin and peach give the palate a generous feel, followed by a brisk, lightly saline finish.
