The fruit was foot-crushed and left on skins for a few hours before a wild fermentation split between Hungarian amphora and stainless steel. It went through full malolactic fermentation to round out the palate, then spent seven months ageing in a new Austrian foudre.\u003c\/p\u003e\n\u003cp\u003eWhen we tasted this, we were struck by the almost \"Spanish\" energy of it - it’s got that waxiness and saltiness you find in great white Grenache from across the globe. It leads with a mix of stone fruit and a subtle, nutty complexity from the amphora time. At 12.2% alcohol, it’s remarkably fresh but has a real sense of weight and \"chew\" to the finish.
