It’s predominantly fermented in 500L casks (with a single foudre in the mix), spending 10 months on lees to build a silky, relaxed texture.\u003c\/p\u003e\n\u003cp\u003eYou get the hallmark white peach and lemon curd, but there’s an extra layer of depth here that makes it feel incredibly complete.
