Ricky leaned into this, using a 100% whole-berry fermentation with about 10 days on skins. He worked the ferment gently - pumpovers early and hand-plunging at the finish - before pressing it off warm to preserve the perfume. The result is a slightly prettier, more ethereal version of EST than we usually see, though it still carries that hallmark mineral tannin that is the site's thumbprint.\u003c\/p\u003e\n\u003cp\u003eEven in a lighter frame, the wine's East Coast DNA is unmistakable. You still get the dark cherry and wild herb notes, but it’s the soil-driven, graphite tannins that really define it. It’s the most\"Itanianate\" of the Pinots, to use a clumsy analogy.
