In 2025, well-timed rain and a cooler summer allowed steady ripening, with a slightly later harvest preserving acidity alongside full flavour.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan\u003eThe hand-picked fruit was fermented with 50% whole bunches and gentle plunging, then spent ten months in French oak, around a third new. That whole-bunch component adds a savoury, spicy dimension to the wine’s generous fruit.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan\u003eDark cherry and plum come with violet, baking spice and a little dried herb.
