The whole berries go straight into tank with minimal handling, fermented slowly before being pressed to stainless steel for settling, then into amphora and large neutral foudre for 10 months. No fining, no filtration, just pure fruit and texture.\u003c\/p\u003e\n\u003cp\u003eIt’s a light, red-fruited expression with plenty of energy – cherry, spice and a fine, earthy tannin that keeps it all together.
