After a string of warm, dry years, Nic headed to the southern tip of the Margaret River cape, where the vines are lashed by both the Indian and Southern Oceans. The result is a wine with a longer growing season and a naturally higher level of \"zip\" and tension than anything else in the stable.\u003c\/p\u003e\n\u003cp\u003eThe winemaking remains as careful as ever: hand-picked fruit, whole-bunch pressed, and fermented in a mix of 90% French barrique (30% new) and 10% amphora. By skipping malolactic fermentation and sticking to the free-run juice, Nic has kept the focus entirely on the site's fresh, salty personality.\u003c\/p\u003e\n\u003cp\u003eThis is a leaner, more saline expression of the Margaret River style. Think Granny Smith apple, lemon, lime, and salted cream, all underscored by wet stone and a bit of chalk. It’s elegant and silky smooth - Nic describes it as very much in the vein of a Chablis, but with that extra bit of Australian \"oomph\" and weight. It’s a compelling, fresh new chapter for L.A.S.
