Interestingly, Alex has also included a splash of Cabernet Sauvignon from Moculta and Ebenezer to add a little structural spine to the blend.\u003c\/p\u003e\n\u003cp\u003eThe winemaking is all about restraint rather than extraction. Alex uses gentle techniques to ensure the wine retains elegance, ageing it for 11 months in French oak barriques (20% new).
