For Blair Walter, it’s a way to develop texture while keeping the character of this mature Bannockburn vineyard at the centre of the wine.\u003c\/p\u003e\n\n\u003cp\u003ePlanted in 1993, Block 6 occupies a sunny, north-facing slope on The Elms estate, where its higher position also exposes it to the wind. The vines are farmed organically and biodynamically, and the slow finish to the 2025 season helped build flavour while preserving freshness.\u003c\/p\u003e\n\n\u003cp\u003eWhole-bunch pressed fruit fermented with wild yeasts in seasoned French oak, followed by a naturally completed malolactic fermentation. Seventeen months in barrel, including eleven on the fermentation lees, gave the wine time to settle before bottling without fining or filtration.\u003c\/p\u003e\n\n\u003cp\u003eRipe apple, a little nuttiness and delicate floral notes lead into a smooth palate, with subtle herbal and spice notes on the finish.
