Philippe Millet was growing grain near Tonnerre, just east of Chablis, in the mid-1960s, then planted vines in the early '80s and started making wine.\u003c\/p\u003e\n\u003cp\u003eHis son Baudouin took over the winemaking in 2011 and the domaine now carries his name. For this Chablis he draws on parcels of roughly 30-year-old vines in Béru and Viviers, two villages on the eastern side of the appellation, planted on the famous Kimmeridgian limestone packed with fossilised oyster shells.\u003c\/p\u003e\n\u003cp\u003eThe 2025 is pale and bright, with lemon, green apple and that stony, flinty edge you want from proper Chablis.
