Raised in a family of cereal growers in Fyé, he came home from Beaune at 23 to just 0.6 hectares his grandfather had planted in the 1960s, mostly humble Petit Chablis that hardly anyone else bothered to farm. Since 1999 he's built the domaine by hand, one lease and one purchase at a time, and it's now one of the most respected names in Chablis.

What sets him apart is the vineyard work, not cellar tricks. He keeps yields low, reads the soils under every parcel and farms under organic conversion, then lets the wine do its thing in mostly stainless steel with only a touch of neutral oak. A good chunk of the fruit for this village wine comes from plots facing Grand Cru Blanchots, just west on the same hill as the great 1er Cru Montée de Tonnerre. The soil there is unusually brittle, sharp Kimmeridgian marl that's almost pure crushed fossilised oyster shell. The plots sit on the right bank of the Serein at various heights and aspects, which gives the wine a bit more depth and roundness than the other side of the river.

The 2025 is crisp, pure and properly incisive, with bright lemon and green apple fruit, good energy and a bit of grip. Give it some time in the glass and the saline, citrus and stony notes really start to build into a long, elegant finish. Oysters are the obvious match, but it's just as good with fish and chips or a roast chook, and it'll happily sit in the cellar for a good few years.

Grand Cru neighbourhood, village price, and a grower who gets it right year after year. Flat out terrific Chablis.
