The soils here are defined by grey-brown loam over shale and sandy limestone, which traditionally gives Polish Hill River Rieslings their tightly coiled, mineral-driven backbone.\u003c\/p\u003e\n\u003cp\u003eThe fruit is conventionally farmed and harvested in the cool of the morning to lock in its natural freshness. In the winery, the process is incredibly precise: the fruit is destemmed, crushed, and pressed. The Adelina team then fractions the free-run juice, which is settled and fermented cool until it reaches complete dryness.\u003c\/p\u003e\n\u003cp\u003eIt's a pretty classic, even demure, Polish Hill River expression - steely, fine, and tightly wound. While it is beautifully pure and refreshing right out of the gate, its driving acidity and mineral core make it a prime candidate for the cellar.
