In the winery, they include the \"hard pressings\" - usually the stuff winemakers discard for being too grippy - to build in extra weight and a bit of phenolic crunch. It’s been fermented on light solids in French oak for nine months, but with only 10% new wood, the fruit stays front and centre.\u003c\/p\u003e\n\u003cp\u003eIt’s wonderfully bright and energetic, leading with lemon verbena and crisp pear. There’s a soft, plush texture to the mid-palate from that barrel time, but it’s reined in by a refreshing mineral-lemon finish.
