Indigenous yeast fermentation in stainless steel, starting from very low temperatures, then three months on lees before bottling. No oak, no shortcuts. Eleven and a half percent alcohol, which is remarkably low and tells you something about where Sandra is coming from with this style.\u003c\/p\u003e\n\u003cp dir=\"ltr\"\u003eWhat you get in the glass is fresh, precise and a little unusual for the region. Fennel, wild herbs, anise and a quiet citrus thread on the nose, then a palate that balances a lightly waxy, creamy texture against a saline, chalky tension.
