It allowed the fruit to ripen slowly, building heaps of flavour while keeping that essential crunch. Will used a bit of whole bunch (15%) for perfume and kept the wine on skins for over a month to build structure. It’s matured in French oak, but with only 20% new wood, the fruit stays the star of the show.\u003c\/p\u003e\n\u003cp\u003eIt’s a gorgeous, layered Pinot. You get bright red fruits like cranberries and sweet cherry, but there’s a darker, more savoury undercurrent of leather and cedar. The tannins are fine and plush, with a pomegranate-like tang that keeps the finish long and fresh.
