Dr John Middleton first made it in 1987, and under his grandson Sam Middleton it remains one of the most revered white wines in the country.\u003c\/p\u003e\n\u003cp\u003eIt's a blend of 65% Sauvignon Blanc, 25% Semillon and 10% Muscadelle, all from the estate vineyard in the Yarra Valley. Each variety is picked when it's ready (the Sauvignon once the green herbaceous notes have gone, the Semillon before the acid gets harsh, the Muscadelle at its most flavoursome) then fermented separately in barrel, mostly older oak. Firm pressing, lees stirring and around 11 months in barrel give it texture and depth rather than obvious oak.\u003c\/p\u003e\n\u003cp\u003eThe 2024 is bright and tightly focused, with lemon pith, white flowers, grilled citrus and a stony, slightly flinty edge. There's real weight and grip through the middle, but the acidity keeps it fresh and the finish just keeps going.
