Winemaker Jeremy Nascimben gave the fruit 16 hours of cold soak on skins to build texture, followed by eight months of lees stirring (battonage) in stainless steel to add a savoury dimension without the influence of oak.\u003c\/p\u003e\n\u003cp\u003eIt’s a distinctive white with a nose of oatmeal, elderflower, and dried apple. The palate is defined by a tight, crunchy profile of green apple and persimmon, leading into a chalky, saline finish.
