It is a spot defined by the cold dirt it grows in, specifically ancient Pakohe (argillite) soils that look a lot like the clay you find in Sancerre.\u003c\/p\u003e\n\u003cp\u003eBecause the site is in Central Hawke's Bay, it is cooler than the famous Gimblett Gravels. That drop in temperature means the fruit holds onto its acid, giving the wine a distinct backbone. The winemaking is all about letting that character shine. The fruit is hand-picked, pressed whole-bunch straight into French oak, and left to ferment wild. \u003c\/p\u003e\n\u003cp\u003eIn the glass, it balances richness with serious energy. It has a lovely, viscous weight to it, packed with ripe stone fruit and a zesty hit of pink grapefruit. But it is the savoury, flinty edge that keeps you coming back.
