The wine is fermented wild rather than with cultured yeast, which gives it a certain unpredictability and texture that sets it apart from more conventional Riesling winemaking.\u003c\/p\u003e\n\u003cp dir=\"ltr\"\u003eThe style is citrus-driven and mineral, with real concentration and persistence. Fresh and precise, with a lightly waxy texture and a long, taut finish driven by natural acidity and a saline edge. Not a fruit-forward, aromatic Riesling in the Clare Valley mould.
