In the winery, the team handled the fruit with their typical light touch to preserve its natural energy, including a bit of whole-bunch fermentation to build structural complexity. The wine was matured in large, neutral French oak casks to let the pristine fruit and ironstone minerality take complete control.\u003c\/p\u003e \u003cp\u003eThe nose is incredibly complex and lifted, throwing out wild raspberry, red cherry, dried herbs, and an exotic mix of market spices and tobacco. On the palate, it's medium-to-full-bodied, balancing its deep plum and peppery spice flavours with a dream-like powdery tannin structure.
