Alex isn't looking for a \"thin\" white; she wants something with a bit of heart. By using a mix of older barrels and ceramic \"Clayvers,\" she’s managed to keep that bright, electric acidity while building in a really pleasing weight and texture.\u003c\/p\u003e\n\u003cp\u003eIn the glass, it’s all about lemon zest and crunchy green apple, but there’s this great sea-salt tang and a slightly waxy feel that keeps it interesting. It’s an understated, high-quality white that shows exactly what Aligoté can do when it’s treated with the same respect as a top-flight Chardonnay.
