The 2022 is just the second release, following the inaugural 2018, and gives a different perspective on a site central to his range.\u003c\/p\u003e\n\u003cp\u003eMade as a Blanc de Noirs (meaning from Pinot Noir), the fruit is picked around a fortnight before the vineyard’s still wines to capture flavour while retaining plenty of acidity. It’s gently pressed into old barrels for a natural fermentation, then rests on its fermentation lees for ten months.\u003c\/p\u003e\n\u003cp\u003eA further 30 months on lees in bottle adds depth, with a low dosage of 3 g\/L making this pretty damn dry. There’s a faint blush of colour, delicate red fruit and a savoury, mineral edge.
