About

About The Wine

Winemaker Tony Davis has taken grapes from two different subregions of the Great Southern zone to make this aromatic and expressive Riesling. As with all of his wines, the goal is to create a drop that celebrates the beautiful and complex landscapes of the area.

With a blend of tank and barrel fermentation (both with wild yeasts and minimal additions), this is a drink heavy on gorgeous citrus aromas and a slightly creamy texture. There's no shortage of minerality either.

Another cracking wine from one of Great Southern's rising stars.

About Snake and Herring

Snake and Herring was founded in 2011 by two wine industry junkies, Redmond “Herring” Sweeny and Tony “Snake” Davis.

Compelled to walk away from their professional roles at the same time, Redmond and Tony decided to embark on a journey to create their own wine label. Over a parcel of epic Porongurup Riesling, an idea began to form. Many late night texts were exchanged and early morning vineyard rendezvous arranged and before long Snake + Herring was created and a Porongurup Riesling born.

From The Producer

We have utilized Riesling from 2 vineyards for this wine; one in the central Mt Barker subregion and the other in the larger Frankland subregion. Both components are separated into free run and pressings fractions. The free run components are settled and fermented in tank. The pressings are run direct to barrel and natural fermentation takes place. The free run component is all about lean tight fruit and length; the barrel ferment components add texture and richness.

The 2021 Sabotage is our fourth release but we have been playing with different techniques for Riesling for several vintages. The vintage was slightly later than we have seen recently due to cooler temperatures and more rain. There was some disease pressure but overall it’s a super Riesling year with powerful yet elegant fruit drive and high natural acids.

The 2021 Sabotage has classic preserved lemon citrus, with some lime curd and wet granite complexity. The barrel fermentation contributes richness and weight to the mid-palate but the finish has a typical Great Southern Riesling line with a pear skin and chalky acidity.

"Pale and freshly youthful in the glass. Aromas of lime leaf, green melon, citrus and wet slate. Quite ripe and generous flavours, there's peach and rockmelon and then tangy grapefruit acidity kicks in and provides the cut and drive. Textural and long." - Aaron Brasher (The Real Review)
