About the Wine
In 2021 Bryan Martin at Ravensworth got his hands on a small batch of pristine Chardonnay from the excellent Johansen's vineyard in Tumbarumba that has long supplied superb fruit for wines such as Penfolds Yattarna.
And from this fruit he's made three different Chardonnay versions in his 'Project C', titled as Reduction, Oxidation and Skin-Contact, all only bottled in magnum.
The Oxidation Chardonnay was put into barrel but not to the brim, and not topped up, so the wine remained in contact with the air. It's got a much deeper colour, and a more developed peach and melon character that may veer towards the honeyed. Immensely satisfying and flavoursome.
There's was no sulphur added at all, so it's essentially a natural wine too, with the oxidation helping protect the wine.
