About the Wine
The Strathbogie Ranges are renowned for producing excellent cool-climate wines. Mac Forbes sources his Riesling from a vineyard near the town of Caveat, which sits at 600m above sea level. This altitude and the related cooler temperatures allow the grapes to develop slowly and retain their acid, something which makes Riesling a joy to drink.
The RS98 is destemmed, crushed and pressed before fermentation, with the wine resting on its fine lees in stainless steel. The fermentation is stopped early, resulting in low alcohol and residual sugar.
With only 7.5% alcohol, the RS98 has a captivating and silky mouthfeel, with the sweetness supporting the honey, curd and ginger flavours, rather than overpowering them. This wine would help tame the heat of very spicy foods.
