About This Wine
Fun fact; Carmenere is the bastard child of Trousseau and Cabernet Franc. Once you know that, so much about this wine makes sense.
Dried green herbs, some pepper, melded with a cornucopia of berries in so many colours of the spectrum. So much brightness, a wine light in body, but heavy (in a good way) with flavour.
Most definitely not Bordeaux-like, or Chilean in style, this wine is defiantly new wave, with a distinctly Aussie twang.

Micah Hewitt is the man behind Defialy, and someone who has taken a unique path to winemaking.
A high-end butcher for over 20 years, the exposure to top end produce, and a love of the land, and good wine eventually led him to this point.
Inspired by the love his parents had for each other, and their children, Defialy (Don’t Ever Forget, I’ll Always Love You) is named for them.
Micah makes wines that he loves to drink and share with friends, pure vibrant wines that speak of nature, with nothing but stomped grapes inside.
