It’s also the earliest-ripening of Dalwhinnie’s single sites, and the measured pace of 2021 allowed the fruit to reach full ripeness at moderate alcohol.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan\u003eJust three tonnes were harvested from the block, hand picked and fully destemmed before fermentation in two small batches. After 15 days on skins, the wine spent 14 months in new and used oak puncheons, a shorter maturation than has been traditional at Dalwhinnie.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan\u003eDark plum, blackberry and red berry fruit come with warm spice, bay leaf and a little cedar.
