I really like it but it is out of the box... Would drink a tonne of this, and likely over ice at times. Why not?

About The Wine
Winemaker David Caporaletti gives this skinsy expression of Pinot Grigio up to 17 days of maceration—more than enough time to impart bags of texture, tannin, and colour!
Pinot Grigio's unique character means the wine has an almost rosé-like pink blush to it, with tartness and refreshment to match. But the wine is still closer to a skin-contact white than anything else, showing loads of stone fruit underpinned by some sensual savouriness.
All the grapes come from organically-farmed vineyards in Adelaide Hills by way of Woodside, and their cool-climate origin is evident in the wine's juicy acid.
About Architects of Wine
The name says it all, Architects of Wine. A passion project of architect turned winemaker David Caporaletti, his winemaking hobby soon became an obsession, which in turn became a label and a new career.
David’s aims with his winemaking is to create interesting and textural wines which are true expressions of the vineyard, vintage and their unique characteristics. His wines are made in incredibly small batches, sometimes of only a few hundred bottles each.
With such small production he is able to take a hands off approach to the winemaking allowing the purity of the fruit to shine through. Each wine has a distinct personality that comes from the attention to detail that Dave gives to each and every parcel of grapes he processes. No additions are made to the wines save for a small amount of sulphur pre-bottling.
