Mac Forbes has planted Aligote on his Woori Yallock vineyard but it's still a few years away from yielding a crop.
And Mac Forbes isn't one to just sit around and wait.
He got his hands on a small parcel of Aligote from the King Valley so he could start getting his eye in with this often over-looked Burgundian variety.
It was whole-bunch pressed and sent to old foudre for maturation - not dissimilar to the way he makes his Chardonnay.
It's a full-flavoured, full-bodied, gently waxy white wine from a grape rarely seen in Aus. More great experimentation from Mac Forbes and his crew.
