About The Wine
Florent Baumard has 14.5 hectares of Chenin in Savennieres, approximately seven of which is located in Clos St Yves, an enviable spot rich in rhyolite, a volcanic rock cherished by local vignerons.
The fruit for this cuvee is harvested with multiple passes through the vineyard, all geared towards capturing the berries at the point just before flavourful turns into richness. There is ripe red apple, pear and pronounced minerality, the wine is made entirely without wood and the textural component and touch of honeyed pastry comes entirely from fruit, lees aging and a little time in bottle.
