About the Wine
Fourchaume is in the north of Chablis. It isn't the farthest you can go, but it's up there. Being so north means that, despite getting long, sun soaked days throughout the summer, things ripen slowly in the slightly cooler temperatures. Moderation and balance are the driving forces here.
There is a lovely clarity to this. While there are all the flavours you'd expect to find in a Chablis, a fresh current of cleansing mountain stream runs through this Chardonnay. Snowmelt, with delicate citrus zest and under ripe peach come through, and as the wine opens it shows some intense lemon curd character too. Considering that this is a 1er Cru, it's is a bargain.
About Domaine de Chantemerle
Chablis is home to some of the finest wines in the world, and some of the most highly regarded producers. Domaine de Chantemerle is certainly one of them, but the shocking thing is that they have only been making wine for 60 years. In less than two generations, this estate has become an icon in one of the world's most established regions. Clearly, they're doing something right.
The Domaine was sounded in the 1960s by Adhemar Boudin, who is the the father of current winemaker Francis Boudin. It wasn't until the 1970s, though, that the family decided to make wine full time and dedicate themselves to Chardonnay. With 35 acres under vine, they produce only a limited number of wines, and each see the utmost love and care, being aged exclusively in stainless steel or concrete to retain freshness and purity.
